Es creador y Director General del Grupo Internacional G.E.I.-2A (Grupo Europeo de Ingenier\u00eda Agroaliment\u00e1ria y Ambiental), fundado en 1992. Sirve principalmente para la pasteurizaci\u00f3n at\u00e9rmica procesada en el\u00a0 envase comercial para mejorar la vida \u00fatil y la seguridad alimentaria del producto.<\/p>\n<p>Las altas presiones isost\u00e1ticas en el mundo de la industria alimentaria es un sistema contrastado en todo el mundo. Sobre todo es muy utilizado en Am\u00e9rica, aunque tambi\u00e9n se est\u00e1 abriendo camino en Europa, Asia y Ocean\u00eda. El 32% de su uso es en productos vegetales. Tambi\u00e9n se utiliza en productos c\u00e1rnicos (27%), productos de pesca (16%) y zumos y bebidas (11%).<\/p>\n<p>En este caso se desarroll\u00f3 en Barcelona por el gran valor estrat\u00e9gico de esta localizaci\u00f3n. Se tuvo que hacer un gran trabajo para poner de acuerdo diferentes agentes empresariales. Seg\u00fan Frigola, sin esta colaboraci\u00f3n la planta que ofrece este servicio no se habr\u00eda llegado a construir.<\/p>\n<p>Este sistema mejora las propiedades nutritivas de algunos alimentos ya que conserva las vitaminas, los minerales e, incluso, es un paso adelante en la fidelidad al sabor de los alimentos. La planta permite trabajar en producciones m\u00e1s grandes sin alterar la calidad del producto. A partir de este sistema tambi\u00e9n es posible innovar en la creaci\u00f3n de nuevas texturas, buscando productos m\u00e1s atractivos para el consumidor.<\/p>\n<p>Tambi\u00e9n permite otras aplicaciones como la extracci\u00f3n de la carne de los crust\u00e1ceos, la apertura de cubiertas de todo tipo de animales, la inactivaci\u00f3n de listeria y la salmonella para la exportaci\u00f3n o la reducci\u00f3n de aditivos en algunos productos, entre otros. Todo ello, reduciendo los costes de producci\u00f3n para que este sistema necesite menos mano de obra para poder ser utilizado.
